</p><p>I don&#8217;t know about you, but I love a really good, fresh, homemade muffin. I especially like the muffins I make because I use fresh ground flour. It can make all the difference in the world when it comes to taste.</p>
<p>And just so you know, a grinder isn&#8217;t all that expensive, but that&#8217;s for another post.</p>
<p>Well, I have this wonderful tasting recipe for an applesauce muffin. I can&#8217;t remember where in the world it came from because I&#8217;ve had it for so long. Recently, a friend asked me for the recipe so I wanted to share it with all of you as well.</p>
<p>If you don&#8217;t grind your own flour, that&#8217;s okay. Whole wheat flour will still do the trick.</p>
<p>It also calls for sucanat which is dehydrated sugar cane and can be bought in most grocery stores. However, if you just want to use granulated sugar, you certainly can.</p>
<p>So, here&#8217;s to a great muffin recipe I hope you and your family will enjoy.</p>
<h3 style="text-align: center;"><strong><span style="color: #800000;">Applesauce Muffins</span></strong></h3>
<p><strong><span style="color: #000000;">Ingredients:</span></strong></p>
<p>1/2 cup oil</p>
<p>1 cup sucanat or granulated sugar</p>
<p>2 eggs</p>
<p>1 cup applesauce (I prefer the unsweetened kind)</p>
<p>2 cups whole wheat flour</p>
<p>1 tablespoon baking powder</p>
<p>1/2 teaspoon salt</p>
<p>1 cup chopped nuts</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 375 degrees.</li>
<li>Grease muffin tins&#8211;enough to make 2 dozen.</li>
<li>Mix together the oil and sugar in a bowl until the sugar is totally wet.</li>
<li>Mix in the eggs and applesauce.</li>
<li>In a separate bowl, stir together the remaining dry ingredients.</li>
<li>Add the dry ingredients to the wet ones, mixing only enough to moisten the flour.</li>
<li>Spoon into a greased muffin tin, filling each about two-thirds full.</li>
<li>Bake in a 375 degree oven for 20 to 25 minutes.</li>
<li>Allow muffins to remain in pan for about 5 minutes, then dump onto a cooling rack.</li>
</ol>
