Are you looking for a refreshing salad idea? Well, here is one I happened upon when I enjoyed a lunch date with my youngest daughter.
This salad is one that can be served as the main entreé for lunch, or is a delicious addition to the main meal for dinner.
Not only is it incredibly tasty, but it is a beautiful salad as well.
Ingredients:
- 1 bag of romaine lettuce pieces
- 1 pt. of fresh blueberries
- 1 pt. of fresh strawberries, cut into bite-sized pieces
- 2 6 oz. cans of mandarin oranges, drained
- 1 to 2 cups of pecan halves
- Several ounces of grilled chicken strips (Tyson has these already
- pre-packaged)
- Poppyseed dressing to your liking.
Preparation:
Combine all the ingredients together into a serving bowl.
The dressing can be put over the entire salad, or allow each person to put it on their salad individually.
This salad is filling and will easily feed 6 to 8 people.
